			<content:encoded><![CDATA[<p>This is the year I decided to try a low-glycemic diet. It&#8217;s working so far, but I&#8217;m starting to miss my crock pot meals, and so is my family. I&#8217;m sure they&#8217;re getting tired of eating my &#8220;diet&#8221; food and would like us all to sit down together and have a nice, hot meal. My crock pot has always been one of my favorite ways of cooking, but now what?</p>
<p>My New Year&#8217;s resolution was made and I am determined to stick to it. That&#8217;s all great, but do I have to put away my beloved crock pot until my diet restrictions slack off a bit? Nope! I&#8217;ve developed and tweaked a few of my crock pot recipes so they will help me stick to my diet while giving my family meals they&#8217;ll enjoy coming home to!</p>
<p>Asian Inspired Beef and Snow Peas</p>
<p>Cut a 2 1/2 lb. boneless Round Steak into 4 equal pieces. Place the steak in your crock pot. Whisk together in a separate bowl, 1 cup of soy sauce, 2 teaspoons freshly grated ginger, 2 cloves of garlic, grated or minced, and 2 tablespoons canola oil. Pour your mixture over the meat and put on the crock pot cover. Cook on low for about 6 hours or until the meat is nice and tender. Serve with a generous amount of cooked snow peas tossed with sauted mushrooms for a delicious Asian inspired meal.</p>
<p>Split Pea Soup with Ham</p>
<p>For a simple soup, throw a 1 lb. bag of split peas into your crock pot along with 2 lbs. of boiled ham, diced up, 3 cloves garlic, minced or grated, 1 medium onion, diced pretty small, 3 ribs celery, finely diced, 1/8 teaspoon black pepper, 7 cups fresh cold water, and 5 chicken bouillion cubes. Set your crock pot to low and let cook for 6 to 7 hours. You may want to BRIEFLY lift the lid on this to give it a stir 2 or 3 times during the cooking time as the split peas will tend to settle.</p>
<p>3 Bean n&#8217; Beef Chili</p>
<p>Brown 2 lbs. of lean ground beef, and drain any excess fat. While the meat is browning, dice 2 medium size onions, 1 green pepper, and 2 ribs of celery and throw it all into the crock pot. Grate 3 cloves of garlic on top of the vegetables. Pour in 2 (16 ounce size) cans of diced tomatoes, 2 regular size cans of garbanzo beans, 1 can of butter beans, and 1 can of black beans, all drained first but not rinsed. Then add a 15 ounce can of chicken broth, 3 teaspoons chili powder (or more if you&#8217;re an adventurous eater), 1/2 teaspoon of ground cumin, 1 teaspoon of black pepper, and 1 teaspoon of salt. You may want a bit more salt, so taste the mix later as it cooks. Now, add the browned ground beef, stir up a little, cover the crock pot and let cook on LOW for about 6 hours. I serve this in big bowls with a dollop of low fat yogurt and a sprinkle of chives. You can garnish with whatever your diet allows!</p>
<p>If you have tried, and failed, diets in the past, you know that the main reason for failure is bland food and lack of family participation. When you&#8217;ve got a bubbling hot and hearty meal in the crock pot, you and your family can hardly feel deprived! Flavorful and filling dishes are the secret to staying on a diet. Try these recipes on your family without telling them that you&#8217;re on a diet and see what happens. They&#8217;ll be asking for repeats and be none-the-wiser and you&#8217;ll be sticking to your diet! Good dieting to you!</p>

But, my crock pot has become a loyal companion in my kitchen, so what else could I do but figure out a few family-friendly meals that I, and my diet, can live with. <p>It&#8217;s hardly a secret that eating more fruits, vegetables and whole grain is good for you, yet many people still don&#8217;t do it. The problem here is that people simply prefer the less healthy foods over these foods. Yet if you plan your meals around these healthy foods, then you can also include some other, not quite as healthy choices as well. To put it in other words, think about eating more healthy foods each day, rather than removing all of the foods you love. You&#8217;ll not have much room left for unhealthy snacks and sweets if you begin to eat more vegetables, fruits and whole grains. You may not believe this but your taste for healthy foods develops with the more healthy foods you eat, so it&#8217;s possible to increase your choices after some time.</p>
<p> There is more and more research showing that not all fats are bad, as long as the good fats are consumed in moderation. Our focus needs to be moderation on the bad fats and consuming more of the healthy ones. Trans fats are the bad fats to avoid, so be aware of the word &#8220;hydrogenated&#8221;. Our diet needs to have as little trans fats as possible, which means reducing the amount of junk food we eat. Omega 3 fats are the types of fats that we need to eat rather than trans fats. Even eating saturated fats in moderation can be healthy when found in dairy products. </p>
<p>Most knowledgeable folks claim that by cooking your veggies, you are losing some of the nutrition; hence raw veggies are much more nutritious anyway. Of all of the trendy diets, one is the raw food diet, this is a disproportionate way to eat and most would not attempt it. Moreover, it&#8217;s not necessary to eat a 100% raw foods diet to gain many of the benefits of these healthy foods. There are is an abundance of raw foods that make up the raw food category, like veggies, fruits, nuts and such. Some raw foods diets also allow raw animal products, including cheese, milk and even meat and fish (though you have to be careful when it comes to raw meat). When you have cooked your foods to 104 degrees or higher, they are no longer regarded as raw.</p>
<p> If you know where to look, you will see that there are so many choices when it comes to healthier foods. You have become so comfortable eating unhealthy foods that it might be hard to make the switch, but healthy foods can quickly become some of your favorites. While it will be hard to not cheat here and there, try sticking to the healthy foods as often as possible.</p>
